We take local seriously. We only use organic flour, focusing our mix on NY state flour including hyper local organic flours & ancient grains. We never compromise on the quality of our ingredients and prioritize seasonal, local, and often-foraged vegetables and herbs, many from our own organic garden.

Unlike neapolitan style pizza, our roman style pizza is made by gently pressing the dough with your fingers, respecting the hard work that the natural leaven (our 70+ year mother dough) has done over our extended fermentation period of up to 72 hours and obtaining an oval, bubbly shape before getting baked. The end result is a pizza that is crispy on the outside and as fluffy as a cloud on the inside, bursting with a depth of flavor.
